Vegan Cream Strawberry Sandwich

Today is my 21 day going fully raw vegan and the results are outstanding! My inflammation is at the lowest it's ever been. I'm buzzing with energy. My skin looks phenomenal. My mood is consistent and positive. I feel so clear and free in my body. Every food I consume on a raw diet, support my health, fuel my cells, and allows healing


I've fallen deep in live with this lifestyle, and I'm getting creative in the kitchen. I certainly found a new passion and I have no intention to stop after this month challenge


Lets talk about sweet! Even though I need to be aware of my insulins level, I'm never gonna stop eating dessert, it brings me so much joy with the celebratory feels that comes with it. But there is no reason for dessert and healthy to not coexist in the same sentence


Here's the recipe for my healyhy "cream filled strawberry "


Recipe


The cream

  • Soaked 1 cup of cashews soaked for 3 hours

  • In a high speed blender, put the cashew with a splash of its water

  • Add 2 table spoon of shredded coconut

  • Add 2 table spoon of maple syrup or blue agave

  • Leave the cream to solidify for 1h in the fridge


Slice few strawberries in half, covered the base one with cream, top with other half. So simple, fresh, and decadent!
