Fermented Probiotic Raw Vegan Cheese




This is a must have in your fridge! Its the most cheese like taste of all the vegan cheese I have ever made. It is full of probiotic, fully raw, and fermented! What else could you ask for a cheese?



The ingredients

  • 2 cups of Macadamias

  • 1 Tbsp of Nutritional Yeast

  • 1 tsp of Pepper

  • 1 tsp of Salt

  • Half a lemon

  • 1 tsp of vegan probiotic


The process


In a high speed blender, mix the macadamia nuts with half a cup of water. Blend til smooth. Add the probiotic and blend some more.


Take the mixture out of the blender and put it into a nut milk bag. Squeeze the water out gently until it is almost dry. Then put the cheese in the nut milk bag, then in a collinder. Put a plate under the collinder, cover with a dish towel, and leave it rest overnight in a warm cuboard.


The following morning, put it in your food dehydrator (or in your over at 105 degree) for about 4 hours. When you take it out of the bag, a crust should have formed .Mix the rest of the ingredents with your cheese. Put in in the fridge for 24hours or more. The longer you wait, the more fermented flavor you get.
