Dreamy CoCo Chia

Recipe
1. In a jar overnight, let sit 3 tablespoons of chia seed with 1 1/2 cup of almond milk.
2. I use fresh coconut meat, if it's not available to you, coconut cream left if the fridge for the night will work also.
3. I put the meat of one coconut, 10 strawberries, 1 tbsp of cacao, 1 tbsp of maple syrup, honey, or agave in the blender. I added 1/2 cup of almond milk. If it's a can of coconut cream, add very little liquid. Blend it all til smooth and creamy. Leave in the fridge for a few hours.
4. Then in a jar, make layers: one of chia, one of the cream. Top with fresh strawberries and cacao nibs. I often put strawberries between the layers, but I had just a few left in the fridge today...
It feels more like a dessert than a breakfast, yet it's vitamin C, omega-3, and protein-packed. It also has a fair amount of healthy fat to support your sense of fulness for few hours!
